DIY Monitor with Pi Zero W and PVOutput

Hi, I’m a newb to PVOutput.
I have been given the task by my father-in-law to investigate the possibility of monitoring a Solar Cell to determine the viability of a site, and view the data remotely.

I am looking at using an ADC and a 30A ASC712 current sensor to obtain values from the solar cell. I may add more sensors if it is deemed useful. I can see there are a number of variables I can log here.

My question is: Is this something that I can do with the Pi Zero W?
I see a lot of posts about using a raspberry pi to get data from your Inverter, but nothing about using a Pi with your own sensors… Are there any links to similar projects you could guide me to?
